About the cultivar
Crown Cut grows Waltham 29, an open-pollinated broccoli developed at the University of Massachusetts’ Waltham Field Station around 1950. It was bred for New England’s short growing season and unpredictable weather, and its uniformity and cold tolerance made it one of the lasting standards among heirloom broccolis.[1]
As a microgreen the variety earns its place with clean, mild flavour, quick and even germination, and a stand that colours up dark green under light—dependable rather than showy, which is what we want at the base of a blend.
Flavor & look
Broccoli microgreens taste like a young broccoli floret—clean, faintly sweet, with a subtle cabbage finish. No bitterness, no bite. The heart-shaped cotyledons (the pair of seed leaves that emerge first) sit on slender white stems and colour up quickly under light, ending up greener than most other varieties on the bench.
They are one of the most versatile greens in the lineup: the flavour plays nicely with almost anything without competing, which is why we treat them as a workhorse base for salad blends.
Nutrition & compounds
Broccoli microgreens are among the most-studied edible microgreens in the peer-reviewed literature. A 2012 USDA-Beltsville study led by Zhenlei Xiao measured vitamin and carotenoid concentrations across 25 commercial microgreen species and found that, gram-for-gram, microgreens generally carried higher levels of these micronutrients than their mature counterparts.[2]
A 2017 paper in Frontiers in Nutrition focused specifically on broccoli microgreens and reported that, across eight nutritionally important minerals (phosphorus, potassium, calcium, magnesium, manganese, iron, zinc, and sodium), the average microgreen-to-mature-vegetable ratio was about 1.7—i.e., broccoli microgreens carried roughly 70% more of those minerals per gram than mature broccoli in the comparison used.[3]
About sulforaphane
Broccoli is best known in nutrition research for a compound called sulforaphane. It is not stored in the plant as such: broccoli tissue contains a precursor, glucoraphanin, along with an enzyme called myrosinase, and the two combine to form sulforaphane when the plant is damaged—chewed, chopped, or bruised.
In a foundational 1997 paper in PNAS, Fahey, Zhang, and Talalay at Johns Hopkins reported that 3-day-old broccoli sprouts contained the sulforaphane precursor at levels widely cited as 10– to 100-fold higher than in comparable mature broccoli tissue.[4] Microgreens are harvested slightly later than the sprouts in that original study (typically 7 to 14 days from sowing, versus 3), and specific levels vary with variety, growing conditions, and harvest timing.[5] Research interest in this family of compounds—the glucosinolates and their isothiocyanate hydrolysis products—continues in broccoli and across the Brassicas.
From seed to harvest
Broccoli microgreens germinate in 1 to 2 days and are ready to cut at roughly 8 to 12 days from sowing, depending on temperature and light. They are harvested at the cotyledon stage—before the first “true” leaves develop—which is the key distinction between microgreens and baby greens.[6]
How to enjoy
- Piled on avocado toast or a fried-egg sandwich
- Stirred into scrambled eggs or an omelet just before plating
- Tossed through a grain bowl or green salad
- Blended into a smoothie for a nutrition bump you can barely taste
- Scattered over soups, tacos, or pizza as the last step
Because sulforaphane is produced by an enzymatic reaction, a brief chew (or a quick chop) does more to release it than a long cook. Heavy heat can deactivate the myrosinase enzyme; a fresh, uncooked topping keeps the reaction intact.
Storage
Keep refrigerated in the original clamshell or a paper-towel-lined container. Best within 7–10 days of harvest. Rinse only right before serving—water on the leaves in storage encourages breakdown.
