About the cultivar
Crown Cut grows Rambo (also sold as Red Rambo), the standard purple-stemmed microgreen radish in commercial rotations. The pigment is anthocyanin, and it develops within hours of the stems being exposed to light—often before the cotyledons have finished opening. The plant is a variety of Raphanus sativus, the same species as the culinary root radish.[1]
Rambo is one of the fastest microgreens on the bench. It germinates within a day, stands up substantially rather than laying flat, and can be harvest-ready in as little as six to ten days from sowing.[2]
Flavor & look
Rambo carries the peppery kick you know from a mature radish, with a nutty, fresh finish on top. The bite is real but never punishing—more “lively” than harsh, and it wakes up whatever you put it on.
Visually it steals the show. Rich purple stems run up from the tray into cotyledons (the pair of seed leaves that emerge first) that shade from deep magenta into green at the tips. Chefs reach for it when a dish needs both texture and colour in one topping.
Nutrition & compounds
Radish microgreens were included in Xiao et al.’s 2012 USDA-Beltsville survey of vitamin and carotenoid content across 25 microgreen species, which established the reference values commonly cited in the microgreen nutrition literature.[3] More recent reviews focused specifically on red radish microgreens have catalogued the presence of phenolic acids, flavonoids, glucosinolates, isothiocyanates, and carotenoids—compound families with active research interest across the cruciferous vegetables.[4]
About isothiocyanates in radish
The Brassicas share a piece of chemical machinery. The tissue holds compounds called glucosinolates plus an enzyme, myrosinase, kept apart in living cells. When the tissue is damaged (chewed, chopped, or bruised) the two mix and produce isothiocyanates.
In broccoli, the dominant player in that reaction is sulforaphane. Radish’s equivalent is a close chemical relative called sulforaphene, produced when the enzyme acts on the dominant radish glucosinolate, glucoraphenin. A 2024 comparison across eight cruciferous vegetables found that daikon-type radish sprouts—the same species as Rambo—produced the largest total amount of isothiocyanates of any of the vegetables tested, with sulforaphene as the dominant compound.[5] As with broccoli, precise levels depend on variety, growing conditions, and harvest timing.
From seed to harvest
Radish microgreens germinate in 1 to 2 days and are ready to cut at 6 to 10 days from sowing, before the first true leaves emerge. Rambo is a beginner-friendly variety for exactly this reason—it’s quick, forgiving, and photogenic.[6]
How to enjoy
- Piled onto tacos, banh mi, or a smash burger for heat and crunch
- Scattered over avocado toast with flaky salt
- Tucked into sushi, poke bowls, or rice paper rolls
- Garnishing soups, deviled eggs, or a plated main for colour
- Tossed through a green salad where you want a little peppery lift
Because the isothiocyanate reaction happens on damage rather than in the raw leaf, a light chew (or a quick chop) does more to release those compounds than a long cook, and heavy heat can deactivate the myrosinase enzyme entirely.
Storage
Keep refrigerated in the original clamshell or a paper-towel-lined container. Best within 7–10 days of harvest. Rinse only right before serving—water on the leaves in storage encourages breakdown.
